Josie’s original snack recipes

Carrot knots: shave strips from a large carrot and tie the strips into knots (p.s., don’t give carrots to bunnies; too much sugar)

Toad on a nut: use cream cheese as glue to stick a chocolate chip on a walnut half

Fancy trail mix: mix together chocolate chips, craisins, peanuts, slivered almonds, freeze-dried strawberries, pretzel sticks

Something savory: cheese cubes and popcorn

Garden tea: pick 2 mint leaves and 2 basil leaves, grind them in a mortar and pestle, and steep for 2 minutes in hot water

Josie’s original meal recipes

Pesto: blend together kale, spinach, basil, hard cheese, walnuts, salt, olive oil, lemon zest and juice; serve with noodles, on grilled salmon, or on grilled cheese

Jalmon: bake or grill salmon, then spread blueberry jam on top

Egg English muffin: fry an egg runny style; toast an English muffin; spread butter on the English muffin, then add shredded cheese, fresh spinach, and the runny egg

Simple spinach salad: squeeze lime juice on fresh baby spinach, then sprinkle salt and drizzle olive oil

Garden ideas

Tomatoes. Snap peas. Basil. Carrots. Beets.

Strawberries. Mustard greens. Collards. Kale.

Information: Carrots and beets are ready to pull when you see orange or red sticking out of the dirt (p.s., split open carrots are overripe).

For best taste, pick snap peas before they get really fat.

Use chicken wire to keep bunnies out. Use bird netting over tomato plants to keep squirrels from eating the green ones.
